I am a formerly obese junk food junkie who transformed into a passion-driven transformational leader after losing 100 pounds. I have maintained a 100-pound weight loss for over 20 years. My experience and education encompasses a broad range of nutrition and healthy cooking disciplines. Life mission is to create a space for change; to inspire, enlighten, educate and motivate people to cook and eat more healthfully.
Serve as a faculty member in the nutrition department at The Southwest Institute of Healing Arts in Tempe, Arizona.
Run my own private nutrition counseling practice since 2003.
Author of The Science of Skinny: Start Understanding Your Body’s Chemistry and Stop Dieting Forever (DaCapo Lifelong Books 2012) and the upcoming The Science of Skinny Cookbook to be published in late 2014.
Created and commercially produce sugarless and flourless oat bran muffins under the brand Dee’s Naturals, which have been selling in natural food markets in the U.S. since 2006.
In 2007 co-founded Processed-Free America, a non-profit organization dedicated to eliminating childhood and adult obesity through nutrition education.

Prior and simultaneous to my nutrition ventures, I worked as an organic chemist for 19 years in the environmental testing industry—moving up the industry ladder from bench chemist to manager of the Quality Assurance Program for one of the nation’s leading environmental testing laboratories.
